I first tried Flames’ pizza several years ago, and it has remained one of those places I return to whenever the opportunity arises. That sort of loyalty is rarely created by novelty alone. It comes from knowing that what arrives at the table will have the same comforting, freshly made quality that made you remember it in the first place.

Chef Mehmet Kiran turns everyday pizza into something memorable through patient dough preparation, fresh ingredients, consistency and genuine neighbourhood craftsmanship.

Much of that character begins long before the pizza reaches the oven. Chef Mehmet Kiran prepares the dough fresh every day, allowing it to rest and develop for around 24 hours before it is ready to be served. It is a simple process in theory, but one that requires patience and planning. The result is immediately apparent in the finished pizza.

The base has substance without becoming heavy, with a satisfying crust that develops a beautifully golden exterior while remaining pleasantly soft inside. There is none of the anonymous, factory-produced character that can sometimes define takeaway pizza. Instead, it feels distinctly homemade — rustic, generous and prepared by people who understand that good dough should be given time.

The toppings continue that straightforward philosophy.
